An unchained animal or person is free from being held back or controlled by something. A prisoner who escapes their cell could be said to have become unchained.
When we say that someone or something is unchained, it usually means they're finally free from restrictions or limitations. For example, if you've been working on a project for years and it's finally finished, you might feel like your creativity is unchained - you can now work on whatever new ideas come to mind without being held back by deadlines or responsibilities. This word is also used in the context of emotions: when someone says their feelings are unchained, they mean that they're finally able to express themselves freely and honestly, without hiding behind masks or pretending to be something they're not.
